Making herb baked eggs 2.0

Made herbed baked eggs on the broiler for brunch. Just because I had eggs, a bunch of coriander and cherry tomatoes in the fridge and I googled eggs coriander and cherry tomatoes to get ideas on what I should make.

It’s so easy to do, but so good. Just heat oil and add these in sequence

  • Olive oil
  • Garlic, 1 clove
  • Coriander stalks and leaves, a bunch, cut into small pieces
  • Cherry tomatoes, 10 pieces, cut into 1/2
  • Dried Italian herbs, as much as you want
  • Tiny red chili, as much as you want
  • Eggs, 4 pieces

Heat oil. Stir fry garlic and add coriander stalks till it smells real good.

Throw in the cherry tomatoes, coriander leaves, chili and italian herbs. Then pour salt till you think it’s enough.

Throw in the eggs and let it cook for a couple of minutes. Garnish with more coriander leaves, chili and spices. I also threw in chia seeds because there were just beside the kitchen counter.

Voila. Ready for consumption!

Senang gila, no? Taste wise, it’s better than the baked eggs I’ve made before. Can’t decide whether it tastes more like tom yam or pizza. Anyway, good to eat with bread or on its own. I had the whole pot to myself 😀
